This comforting "Tarte au Sucre" comes straight from the North of France, where it's cherished in family homes but still surprisingly underappreciated outside the region. Soft, warm, and filled with a creamy caramelized center, it's the kind of dessert that brings people together, especially when shared straight from the oven. Despite its simplicity, it delivers a deep, nostalgic sweetness that deserves more recognition.

This recipe is for 4 people

Shortcrust pastry :
75g butter
280 g flour
50 g vergeoise sugar
4 g salt
100 ml milk
16 g fresh baker’s yeast
1 egg
80 g unsalted butter
Filling:
100 g crème fraîche (thick cream)
100 g vergeoise sugar
40 g unsalted butter
DIRECTIONS
In the bowl of a stand mixer fitted with the dough hook, combine the flour, sugar, and salt on medium speed.
Add the milk, fresh yeast, and egg. Mix again on medium speed until the dough starts pulling away from the sides (4min).
Add the softened butter in small pieces and knead for a few more minutes (5 to 8minutes) until the dough detaches cleanly from the bowl again.
Cover with a clean cloth and let it rest at room temperature for 1h30min.
Once the dough has risen well, transfer it to a greased 24 cm tart pan.
Spread the dough evenly to the edges using a spatula or the back of a spoon.
Cover again and let it rest for another 40 to 60 minutes.
Meanwhile, mix the crème fraîche and vergeoise sugar in a bowl.
When the dough has puffed slightly, press it gently with your fingertips to create small indentations.
Pour the cream-sugar mixture on top and spread evenly. Dot with the remaining butter and sprinkle a bit of extra vergeoise on top.
Bake for 15 minutes in a preheated oven at 180°C / 350°F (fan setting).
Enjoy warm, ideally just out of the oven!
