This recipe is for 4 people

Shortcrust pastry :
75g butter
30g icing sugar
18g almond powder
1g salt
30g egg
125g flour
40g cornstarch
Filling :
150g liquid cream
150g heavy cream
2 apples
30g sugar
5g icing sugar (topping)
DIRECTIONS
Sweet Pastry Crust
Mix the sugar with the butter until well combined.
Add the egg and whisk until smooth.
Incorporate all the dry ingredients (flour, almond flour, cornstarch, and salt). Mix by hand until a dough forms—avoid overworking it to keep the crust crisp.
Wrap the dough and let it rest in the fridge for 30 minutes.
Roll out the dough and cut a disc using your tart mold. Cut a 30cm strip for the tart sides.
Let the dough rest in the freezer for 15 minutes before assembling.
Line the tart mold with the dough, pressing firmly to seal the base and sides. Trim any excess and place it back in the freezer so the crust stays cold.
Filling
Cut the apples into quarters, then slice them into thick wedges.
In a bowl, mix the liquid cream, thick cream, eggs, and sugar.
Take the frozen tart shell and arrange the apple slices in a rosette pattern.
Pour the cream mixture over the apples.
Bake at 180°C (350°F) for 35 minutes.
Once out of the oven, sprinkle with powdered sugar and serve warm—ideally with vanilla ice cream!
