The cherry, undoubtedly the signature fruit of summer, both fresh and indulgent. Today, I decided to make a simple yet incredibly addictive recipe: the classic cherry clafoutis.

Grab your ingredients and let’s dive into making this easy cake :

This recipe is for 2 people

Time required : 45min

Preparation time : 15min

Baking time : 30min

Clafoutis cherries

Cake

250g cherries

100g flour

60g sugar

2 eggs

200ml milk

40g butter + 5g for greasing

½ vanilla bean

DIRECTIONS

  • Melt the butter and mix it with the eggs.

  • Add the sugar and flour, stirring until you get a smooth batter.

  • Heat the milk with the vanilla bean and pour it into the batter.

  • Pit the cherries and place them at the bottom of a buttered 16cm mold.

  • Pour the batter over the cherries and bake at 190°C (375°F) for 30-40 minutes.

  • Once out of the oven, you can sprinkle the clafoutis with powdered sugar.

You can use any type of fruit (except citrus) to make a clafoutis, depending on the season. I recommend letting the cake cool before serving. Enjoy!
