Gâteau des rois - A 10-Minute Recipe

Missing the taste of the almond galette goodness already? Try the Gâteau des Rois! So easy, even a kid could make it. Only 10 minutes of prep if you don’t have time to spend the whole day baking. Soft frangipane, crispy layers, and buttery indulgence, all in one bite.

An almond cake

This recipe is for 4 people

Time required : 40min

Baking time : 30min



Cake:

2eggs

80g butter

60g sugar

90g almond powder

40g flour

50g flaked almond

1 orange juice & zest

1 lemon juice & zest



DIRECTIONS


  • Cream the butter with the sugar by whisking vigorously until the mixture becomes light and creamy.

  • Add the eggs and mix well.

  • Zest your citrus fruits using a grater or a zester.

  • Add the juice of the orange and lemon as well. (If you don’t like citrus, you can omit them, but reduce the almond flour and regular flour by 15g each.)

  • Mix vigorously. Don’t worry if the mixture looks curdled or uneven—this happens when fat and water mix.

  • Add the dry ingredients (almond flour and regular flour) and whisk until the batter becomes smooth.

  • Pour the batter into a baking mold. You can line it with parchment paper to prevent sticking. Here, I’m using a 12cm diameter mold. Fill the mold up to ¾ full.

  • Generously sprinkle with sliced almonds.

  • Bake at 170°C (340°F) for about 30 minutes. Keep an eye on it, as baking time may vary depending on your oven.



The flavors of the citrus will be even more vibrant once the cake has cooled. I recommend letting it cool before serving. You can also dust the galette with powdered sugar for a touch of sweetness and balance. Enjoy!
