Rice :
100g round rice
250g whole milk
1/2 vanilla pod
20g sugar
50g liquid cream (30% fat)
Caramel :
80g sugar
80g liquid cream (30% fat)
30g salted butter
Caramelized rice :
20g puffed rice
20g sugar
5g butter
DIRECTIONS
Prepare the Rice:
Blanch the rice: bring it to a boil in water, then drain using a fine sieve or strainer.
Cook the Rice:
In a saucepan, combine the rice with milk, vanilla, and sugar.
Simmer gently over low heat for about 10 -15 minutes, stirring occasionally, until the rice is tender and creamy.
Transfer the cooked rice to a bowl and let it cool in the fridge for at least 4 hours.
Make the Whipped Cream:
Whip the heavy cream until it’s firm yet airy, maintaining a mousse-like texture.
Gently fold the whipped cream into the rice to create a creamy and light riz au lait.
Prepare the Caramel Sauce:
In a dry pan, make a dry caramel (at medium heat) by heating sugar until it melts and reaches a deep amber color.
Carefully add the butter, stirring until fully incorporated.
Slowly drizzle in the heavy cream while stirring continuously with a spatula to avoid splattering.
