Riz au lait - Crunchy rice pudding

With its silky texture and just the right touch of sweetness, it’s the ultimate comfort food for any occasion. Whether you're an experienced cook or just starting out, this recipe is easy to follow and uses only a handful of ingredients to create a dessert that feels like a warm hug in a bowl.

This recipe is for 2 people

Baking time : 35-40min

Resting time : 3h


Rice :


100g round rice

250g whole milk

1/2 vanilla pod

20g sugar

50g liquid cream (30% fat)


Caramel :

80g sugar

80g liquid cream (30% fat)

30g salted butter



Caramelized rice :

20g puffed rice

20g sugar

5g butter



DIRECTIONS


  • Prepare the Rice:

    • Blanch the rice: bring it to a boil in water, then drain using a fine sieve or strainer.


  • Cook the Rice:

    • In a saucepan, combine the rice with milk, vanilla, and sugar.

    • Simmer gently over low heat for about 10 -15 minutes, stirring occasionally, until the rice is tender and creamy.

    • Transfer the cooked rice to a bowl and let it cool in the fridge for at least 4 hours.


  • Make the Whipped Cream:

    • Whip the heavy cream until it’s firm yet airy, maintaining a mousse-like texture.

    • Gently fold the whipped cream into the rice to create a creamy and light riz au lait.


  • Prepare the Caramel Sauce:

    • In a dry pan, make a dry caramel (at medium heat) by heating sugar until it melts and reaches a deep amber color.

    • Carefully add the butter, stirring until fully incorporated.

    • Slowly drizzle in the heavy cream while stirring continuously with a spatula to avoid splattering.


  • Optional Garnish for Texture:

    • Caramelize puffed rice (and optionally some nuts) in a caramel to add a crunchy topping.


  • Assembly:

    • Ensure all elements are cold before plating for better consistency.

    • To serve, you create a small well in the riz au lait and pour in some caramel sauce.

    • Garnish with the caramelized puffed rice and nuts if desired.
