Valentine's recipe : Red love

In a rush to prepare tonight's dinner ? I got u !

With this simple recipe, you will delight your beloved for sure. Strawberry feat white chocolate is the perfect combo for tonight. In a verrine or a big bowl to share, feel free to interpret this recipe in your own way.

This recipe is for 2 people

Time required : 40 min

Baking time : 30 min

Resting time : 3 h



DIRECTIONS


Chocolate ganache :



50 g white chocolate

110 g liquid cream (30% fat) (1)

110 g cold liquid cream (30% fat) (2)

1/2 gelatin leaf

1/2 vanilla pod



  • Boil the cream with the vanilla bean

  • Pour the boiling cream over the white chocolate

  • Add half a sheet of gelatin previously hydrated in a bowl of water. Don't forget to wring out the gelatin sheet

  • Mix with a spatula until the chocolate is completely melted

  • Pour the cold liquid cream and mix

  • Let stand in the fridge for 3 hours

  • Remove the thickened mixture from the fridge and whisk until the ganache is firm but airy.

  • Keep it in the fridge until ready to serve.



Strawberries coulis :



300 g strawberries

50 g water

40 g sugar

1/2 gelatin leaf


  • Make a sugar syrup: put the water and sugar in a saucepan

  • Melt the sugar and let it boil slightly (medium heat)

  • Add the strawberries (cut in half) and cook until you get a compote

  • Remove from heat and add half a sheet of gelatin previously hydrated in a bowl of water. Don't forget to wring out the gelatin sheet

  • Mix and blend the compote

  • Pour the coulis into a bowl and let it rest for 1 hour in the fridge



Almond crumble :


50 g butter

50 g flour

50 g sugar

20 g almond


  • Soften the butter in the microwave for 30 seconds

  • Cut almonds into small pieces

  • Mix sugar, flour, soft butter and chopped almonds in a bowl

  • The texture of the mixture should be crumbly, like a crumble

  • Pour the crumble on a baking sheet

  • Put in the oven at 180°C / 356°F for 30 min



Assembling :


100 g strawberries


In a verrine or a bowl to share:

  • Put strawberry coulis in the bottom. There should be more coulis than ganache to have a good balance of taste.

  • Add diced strawberries

  • Cover with white chocolate ganache

  • Sprinkle with almond crumble
